Grilling Health for the End of Summer

While everyone tries to make the most of their last few weeks of sunshine and free time, it’s important to keep in mind some grilling tips.

We’ve also found some great recipes to get your family back on the health track for schools.

Remember, “there’s more to barbecue than burgers and steaks,” and thanks to the University of Colorado Health’s own dietician, Sarah Morales, we have some recipes here for you:

  • 2 Tablespoons of Olive Oil
  • 1 Tablespoon of Orange Juice
  • 1 Tablespoon of Orange Marmalade
  • 1 Tablespoon of Chopped Fresh Cilantro
  • 1 Teaspoon of Red Pepper Flakes
  • Salt to Taste
  • 1 Pound of Chicken Breast, Fish, Shrimp, Tofu, or 2-3 Cups of Vegetables

Marinade for 1 Hour to Overnight.

Easy Grilled Portabello Mushrooms with Red Pepper & Parmesan

  • 2 Porabello Mushroom Caps
  • ½ Cup of Red and/or Yellow Peppers, Thickly Sliced
  • 1-2 Tablespoons of Balsamic Vinagrette Dressing of Your Choice
  • Salt and Pepper to Taste
  • 2 Teaspoons of Fresh Shredded Parmesan Cheese

Marinate Peppers and Mushrooms for at least an hour. Grill, and let cool, then dice and sprinkle peppers on top of mushrooms along with 1 Teaspoon of Parmesan cheese on each.

Red, White, and Blue Salad

  • 1-4 Cups of Mixed Salad Greens
  • 1 Cup of Blueberries and “red” berried of your choice (strawberries, raspberries)
  • ¼ Cup of Reduced Fat Feta Cheese
  • Light Balsamic Dressing of Your Choice

Top Salad Greens with Berries and sprinkle with Feta Cheese.

We also have some General Grilling Tips for you:

  • Cut each vegetable evenly when making vegetable skewers so it cooks evenly
  • Marinade should include simple ingredients (make your own using plant-based oil, balsamic vinegar, garlic, salt and pepper, and a little lemon or lime juice)
  • Vegetable baskets are great for grilling vegetables
  • Grill large pieces of fruit (it enhances natural sweetness and flavors)
  • Stay away from heavy potato salad
  • Place heavy/dense vegetables in foil before grilling
